Eggetarian
Eggetarian is a word you mostly hear in India: not vegetarian, not quite meat-eating, and catered for properly rather than as an afterthought. These three are what a South Indian kitchen does with eggs.
Egg podimas is the interesting one — eggs scrambled hard and then tempered with mustard seed, onion and curry leaf, so it eats more like a dry curry than breakfast. The masala omelette is folded around onion, green chilli and spice, thicker than a French omelette and meant to be eaten with bread or rice. Full boil is exactly what it says, seasoned and served whole.
Everything in this section is marked non-veg on our menu, which is the standard Indian convention for egg — worth knowing if you are ordering for a vegetarian table.
